檸檬芝士餅

材料:101_8837

忌廉芝士   300克

淡忌廉     250克

魚膠片     2片

檸檬汁     3茶匙

蛋白       1隻

蛋黃       1隻

砂糖       100克

消化餅     180克

牛油       80克

步驟:

1. 先將忌廉打至企身,放入雪櫃備用。101_8847

2. 消化餅放入密實袋壓碎,將牛油溶化倒入消化餅中拌勻,倒入8吋餅盆中壓至平均。101_8850

3. 魚膠片放入凍水浸軟,座熱水至溶化。101_8865

4. 忌廉芝士打至滑,加入蛋黃和糖打至滑,將檸檬汁加入魚膠水中再加入忌廉芝士中。101_8874

5. 加入已打起的忌廉再拌勻。101_8881

6. 蛋白打至企身,加入芝士餡中。101_8885

7. 將芝士餡們入餅底上,放入雪櫃至凝固。101_8888

8. 從雪櫃取出,加上裝飾便成。101_8893

1.可用火槍輕燒蛋糕模,更易甩出。101_8590

製作芝士餅的主要材料就是芝士,當中鈣質含量高,因此對兒童的骨骼和牙齒發展極為重要。在製作這個甜品時必需注意忌廉芝士的脂肪含量,一般約含35%脂肪,而大部份更是飽和脂肪為主,攝取過量會增加血液中「壞膽固醇」。因此,選擇忌廉芝士時應選擇低脂配方,便能讓兒童適量地享受甜品的滋味。

檸檬本身營養價值甚高,當中包括維生素C、磷、鉀、鈣、β-胡蘿蔔素和纖維。研究發現維生素C能有效預防某些癌症及心血管疾病、提高自體免疫力以及改善皮膚質素。另外,檸檬表皮內的白色海綿組織更含有豐富的生物類黃酮,這種活性成份擁有著顯著的抗氧化能力,能維持血管彈性,減少高血壓以及其他心血管疾病的出現。除此之外,生物類黃酮亦能強化肝臟功能,對維持肝臟解毒功能非常重要。

Lemon Cheese Cake

Ingredients:

Cream cheese   300 grams

Unsweetened cream 250 grams

Gelatine 2 strips

Lemon juice 3 tea spoons

Egg white 1 portion

Egg yolk 1 piece

Sugar   100 grams

Digestive biscuits 180 grams

Butter   80 grams

Steps:

1. Beat the cream until it thickens. Then, put it in the fridge for later use.

2. Crush the biscuits in a zip-lock bag. Melt the butter and then mix it in with the biscuit crumbs. Pour the mixture onto an 8-inch cake pan and press it down firmly and evenly.

3. Soften up the gelatine in cold water. Then, melt it in hot water.

4. Beat the cream cheese until it’s smooth, add the egg yolk and sugar and beat it some more. Pour in the lemon juice and gelatine water.

5. Bring out the cream from the fridge, put it in with the cream cheese mixture and then blend everything together.

6. Beat the egg white until it stiffens and then add it into the cream cheese mixture.

7. Pour the mixture onto the biscuit crust in the cake pan. Place it in the fridge until it solidifies.

8. Take it out of the fridge. Decorate it and serve.

Tips:

1. You can use a burning gun for cooking to heat the surface of the cake pan lightly so the cake comes out easier.

2. Remember to press the biscuit crumbs firmly, otherwise, the crust will loosen up.

The major ingredient used in preparing cheese cakes is cheese; it is high in calcium, and therefore beneficial towards the development of bone and teeth in children. During preparation, you should be aware of the fat content in cream cheese, normally cream cheese contains approximately 35% of fats, and the majority being saturated fats.
